<p>Winter time is citrus season on the Big Island, Hawaii.  This &#8220;bumpy skinned&#8221; kaffir lime is mostly used for zest. When I ask people to scratch and smell it, they are taken aback by it&#8217;s sweet, but powerful aroma. There has been a vodka made with this unique smelling, and tasting lime. Citrus peels are said to be good at fighting skin cancer.</p>
